The smell permeated our small apartment as soon as my husband entered the door, and I knew he had brought home something good.

I just didn’t know yet that it was really good.

I mean really, really good.

It was a type of pizza I had never seen (or tasted) before–before I came to Brazil.

Today, I’m sharing this delicious Brazilian recipe for pizza that we like to call “chicken fricassee.”

This Brazilian recipe for chicken fricassee pizza is not a stew.

So what does it have to do with chicken fricassee?

Well, to be honest, the name for this pizza comes from an actual pizza parlor in Brazil called O Dom da Pizza. My family fell in love with this pizza–all of us, including our toddlers.

But we were not going to stay in Brazil forever. So I had to “steal” the recipe to take it with us when we moved.

“Steal” is a little too strong of a word. “Guessed the recipe” is more accurate.

I did my best to study the flavors and ingredients of the pizza over several dinnertimes. And I was very pleased with the result when I finally tried my hand at making it.

HOW TO MAKE CHICKEN FRICASSE PIZZA FROM BRAZIL

  1. Make the pizza crust.
  2. Fry the chicken breast in milk and butter until the outer part begins to cook.
  3. Add water and salt and boil until the chicken breast is cooked through.
  4. Remove the chicken from the water and allow to cool.
  5. Shred the chicken.
  6. Fry the onion in butter. Add cream, milk, chicken bouillon, and garlic powder.
  7. Spread the chicken over the pizza crust.
  8. Spread the cream sauce over the chicken.
  9. Top with sliced green olives and drained corn kernels.
  10. Sprinkle with crushed potato chips (or batata).
  11. Top with shredded mozzarella cheese.
  12. Sprinkle with oregano.
  13. Bake at 400F for 15-20 minutes.

Ingredients

  • PIZZA CRUST
  • 1 1/2 cups all-purpose flour
  • 2 tsp quick yeast
  • 1/2 cup warm water
  • 1/8 cup olive oil
  • 1/2 tsp salt
  • 1 tsp white sugar
  • CHICKEN
  • 2 medium chicken breasts
  • salt
  • 3-4 cups water
  • butter
  • milk
  • GARLIC CREAM SAUCE
  • 2 Tbsp salted butter
  • 1 cup heavy cream
  • 1 cube chicken bouillon
  • 1/4 cup minced onion
  • 2 tsp garlic powder
  • 1/2 cup milk
  • OTHER TOPPINGS
  • 1/2 cup sliced green olives
  • 1 cup corn kernels (frozen or canned), drained
  • 1/2 cup crushed potato chips
  • mayonnaise (optional)
  • 2 Tbsp oregano

Instructions

1. Mix together the warm water and yeast and allow to sit for 5 minutes, or until it begins to bubble.

2. Add the oil, water, and salt. Stir. Then add all the flour and mix well. Knead for 2 or 3 minutes. Let sit until doubled in size, about 1 hour.

3. Fry the chicken breast in milk and butter until the outer part begins to cook. Add water and salt. Boil until the chicken breast is cooked through.

4. Remove the chicken breast from the water and allow to cool. Shred the chicken thoroughly.

5. Fry the onion in butter. Add cream, milk, chicken bouillon, and garlic powder.

6. Roll out the pizza crust to about 1/2 inch thick. (It should be on the thinner side.)

7. Spread the shredded chicken evenly over the pizza crust.

8. Spread the cream sauce over the chicken, making sure to cover all the chicken. (Any pieces of chicken left uncovered by sauce will become dry during baking, so make sure that you coat them well with the sauce!)

9. Top the pizza with sliced green olives and drained corn kernels. Then sprinkle with crushed potato chips (or batata).

10. Top with shredded mozzarella cheese. Sprinkle with oregano.

11. Bake at 400F (220C) for 15-20 minutes, or until the crust is cooked through.
